It was a pretty fun and productive weekend. J & I got to spend some time with other couple friends and it was really very nice to get away for a bit. More on that later.
Last weekend, I wanted some buffalo chicken wings. I have made them before but I wanted to look for a healthier alternative this time. So I went looking on my favorite site and got ideas for oven baked buffalo chicken wings. SCORE!
The buffalo sauce was pretty basic. It had 3 ingredients. 4 table spoons of butter, about a cup of Frank's red hot sauce and 1 table spoon of white vinegar. I stirred until the butter was fully melted and everything had mixed well together.
I brined the chicken in water and salt for a few hours. Then I sprayed it with cooking spray and added some sea salt and fresh ground black pepper. Then baked in a 400 degree oven for 15-minutes on each side.
Then I brushed the chicken with the buffalo sauce.
And baked for another 15-minutes.
The end results, delicious buffalo chicken wings for lunch this week in addition to the beans and rice I made. YUM!

ReplyDeleteI love spending time with other couples. Hope you are able to do it sometimes. I am thinking of starting a monthly game night or something. Will have to figure out the logistics of that since all of my friends have kids.
