DIY: Yummy crepes with a twist!

I love crepes! Our favorite are banana/Nutella crepes. When J & I went on our honeymoon, we ate A LOT of crepes in Paris. They were just DELISH!
One of my sisters makes the best crepes. When we visited her last year in The Hague, she introduced us to some store bought crepes. 
We loved them so much that we walked quite a distance to a grocery store that had them so we could get some to bring back with us.

We have a seat down home-cooked brunch as a family at least one morning every weekend. I loved doing this as a child and I love that I can continue that tradition with my family now.

Fast forward a few months and our crepes were all gone. We had my sister bring some with her when she came back to the States for the holidays last year. Of course, those were eaten up in a few weekends. 

I decided instead of wasting money purchasing them (I couldn't find pre-made ones at ANY store here in the States...not even at Whole Foods stores), I should try to make them myself! 
So I went to my trusted favorite site and found this recipe. 
JOE has been having some "carb sensitivity" per her pediatrician so we have been giving her more whole grain and fiber filled items to help with that. I decided to take the recipe and make modifications to the ingredients to better suit us. 

Ingredient swap:
3 cups of milk (instead of 2 cups per the recipe. The wheat flour and flaxseed made the batter thicker so you need extra milk to thin it out)
1 cup white wheat flour (instead of regular flour)
1/2 cup ground flaxseed (instead of regular flour)
1 egg
1 tablespoon vegetable oil
1/2 teaspoon baking powder
2 tablespoons sugar

I followed the steps in the recipe and here's the end result.


First crepe was a little darker but it got better.

And hubby's favorite filling...NUTELLA!

You can't even tell that it has wheat and flaxseed!


This was DELISH!!! Hubby said it should now be a family staple! I am glad he liked it because I was afraid he wouldn't. 

I highly recommend it. Its a lighter alternative to pancakes.

  1. Uhhh- I was reading the link for the directions and I could actually smell the scent of crepes in my office... Is that crazy?! Someone must be warming up some pastry in the kitchen. Lol. I'm now hungry for crepes!!

    1. Do it do it! It is so easy to make and I know you'll enjoy it. You don't even have to do the flax seed and wheat. It'll still taste awesome. Let me know how it turns out when you do make it.
